Beijing Academy of Forestry and Fruit Science has made new progress in walnut deep processing research

The research team used neutral protease enzymatic hydrolysis of walnut protein, followed by continuous separation and purification using ultrafiltration, gel chromatography, high performance liquid chromatography and other technologies to obtain components with high ACE inhibitory activity. The mass spectrometry analysis showed that the ACE inhibitory activity was higher. The amino acid sequence of the three peptides of, clarified its amino acid sequence, and laid the foundation for the scientific question of how walnut protein peptides inhibit ACE activity and thus exert blood pressure lowering activity.
