New progress has been made in the theoretical study of food derived protein/peptide carbohydrate covalent compounds in Huazhong Agricultural University

This study originated from our laboratory’s previous research on the calcium absorption promoting activity of bioactive peptides and polysaccharide covalent compounds. First, we summarized the source and structural classification of natural psccs. Secondly, the chemical synthesis methods, reaction conditions and characterization methods to improve the functional properties of food derived psccs were introduced. Finally, the functional properties of food derived psccs, such as emulsification, edible film/coating, delivery of active substances, and biological activities, such as anti-oxidation, anti osteoporosis, anti diabetes, anti-bacterial, were widely discussed. It provides a systematic and solid theoretical basis for the future research on the synthesis, production and activity of food derived protein/peptide carbohydrate covalent compounds.
