Potassium aluminum sulfate (also known as potassium alum) and ammonium aluminum sulfate (also known as ammonium Mingji) are commonly used food additives in food processing. Aluminum residues will be produced after use. Aluminum containing food additives can be used as bulking agents, stabilizers, anti caking agents and dyes. Long term intake of foods with excessive aluminum residues may affect the absorption of iron, calcium and other nutrients, leading to osteoporosis, anemia and even the development of nerve cells. The national food safety standard for the use of food additives (GB 2760-2014) stipulates that the maximum limit of aluminum residue of alum (potassium aluminum sulfate or ammonium aluminum sulfate) in fried flour products is 100mg/kg. The reason why the aluminum residue in fried dough sticks exceeds the standard may be that individual enterprises use aluminum containing additives beyond the limit and scope in the production and processing process in order to improve the taste of products, or the aluminum content in the compound additives used is too high.
 
Sodium cyclamate, the chemical name of which is sodium cyclamate, is a commonly used sweetener. Excessive sodium cyclamate will damage human renal function, even cause teratogenesis and cancer. The national food safety standard for the use of food additives (GB 2760-2014) stipulates that cyclamate shall not be used in Baijiu. The reason for the detection of cyclamate in Baijiu may be the improper use of raw and auxiliary materials by the production unit or the lax control of the production process. The raw and auxiliary materials contain sweeteners and are brought into the liquor; It may also be that in order to reduce the production cost and improve the taste of the product, the production unit uses sodium cyclamate in the product to regulate the taste.

Bifenthrin is a kind of pyrethroid insecticide with broad spectrum, rapid action, no movement in the soil, relatively safe to the environment and long residual period. It has contact killing and stomach poisoning effects, and has no inhaling and fumigating effects. Long term exposure may cause harm to human nerves, reproduction and immune system. According to the national food safety standard maximum residue limits of pesticides in foods (GB 2763-2021), the residue limits of bifenthrin in Citrus grandis should not exceed 0.05mg/kg. The reason why bifenthrin exceeded the standard in Wakan may be that fruit farmers did not know the safe interval of pesticide use, so they used or abused pesticides illegally.
 
In addition, there is also a problem of quality indicators detected in a batch of food. The reason why fructose and glucose in honey are not up to standard may be that the brewing time of honey is insufficient and the moisture content of honey is too high due to immature honey; It may also be that illegal enterprises add syrup to honey or directly use syrup to fake in order to improve the sensory quality of products.
