Recently, the school of food science and technology of South China Agricultural University published a publication entitled”discrimination and quantification of advanced edible bird’s nest Ba” in food control (top, if=5.548), a top international journal in the field of food science and technologySed on their improved cohesion stable isotope ratios”. The last corresponding author of the article is Wei Xiaoqun, an associate researcher of Guangdong Key Laboratory of food quality and safety, South China Agricultural University, and the first author is master Zhang Minjie.
Edible bird’s nest (EBN) is popular among consumers because of its nutritional value. Due to the low output, the adulteration of edible bird’s nest is serious. At present, the detection methods of bird’s nest can be roughly divided into molecular biology and chemical analysis methods, but molecular biology methods can not be used to predict the adulteration content; Chemical analysis methods are not suitable for distinguishing homologous components, such as sialic acid adulteration. As a new detection method, stable isotope ratio technology can realize qualitative and quantitative discrimination without being affected by foreign components, and can be considered as a detection method for the authenticity of bird’s nest. Aiming at the problems of large error of C, N, O and H stable isotopes of the true bird’s nest and the inconsistency of the difference characteristics between different isotope groups under different adulteration modes, this paper proposes a modified stable isotope ratio method, establishes a multi-dimensional discrimination method of bird’s nest adulteration modes and a prediction model of three bird’s nest adulteration contents, and the discrimination accuracy is as high as 100%, which has been successfully applied to the analysis of real samples, The qualitative and quantitative discrimination of bird’s nest with high accuracy is realized. Wei Xiaoqun, male, associate researcher of South China Agricultural University, master’s supervisor, doctor of polymer chemistry and physics of Sun Yat sen University, postdoctoral fellow of agricultural and forestry economic management of Renmin University of China, and senior engineer of the former Guangdong Inspection and Quarantine Technology Center (now Guangzhou Customs Technology Center). Research interests include food quality and safety testing technology, food processing and manufacturing, functional food development, etc. He has won two second prizes of Guangdong Provincial Science and technology award, one second prize and two third prizes of the science and technology inspection Promotion Award of the General Administration of quality supervision, inspection and Quarantine of the people’s Republic of China; Presided over or participated in the formulation and revision of 4 standards; Participated in publishing 9 monographs. In the past three years (2020 to now), it has authorized 6 national invention patents and published 7 top scientific research papers in the first district of the Chinese Academy of Sciences.
