Recently, Professor Zhang Guoqiang from the Department of Food Science and Engineering, School of Biology and Food Engineering, Anhui University of Technology, with the first author and Anhui University of Technology as the first signing unit, published online in the top international journal”Journal of Agricultural and Food Chemistry” Published a cover paper entitled”Quantitative proteome profifiling provides insight into the proteins associated with βglucan accumulation in hull-less barley grains”. The publication of this paper is a breakthrough in the cover article of the Top academic journals of the Chinese Academy of Sciences. There are also two series of papers titled”Quantitative proteomics analysis reveals proteins and pathways associated with anthocyanin accumulation in barley” and”Comparative proteomic analysis of hulless barley cultivars (Hordeum vulgare L.) differing distinctly in β-glucan content”. Food Chemistry” (IF:6.306, Top journal) and”LWT-Food Science and Technology” (IF:4.006, Top journal) were published.
This series of research work reported the anabolism regulation mechanism of the main functional active substances such as highland barley β-glucan and anthocyanin, which promoted the research of food functional factors from apparent separation and identification to the biosynthetic process of functional factors and The level of molecular interaction has important theoretical guidance and practical application value for the development and application of food functional factors. Professor Zhang Guoqiang is a high-level talent introduced by our school in 2018. He is mainly engaged in the development and application of food functional factors. In the past three years, he has presided over the National Natural Science Foundation of China, the provincial key research and development projects, the provincial natural science foundation, and the opening of the national key laboratory. There are more than 10 projects at the provincial and ministerial level or above, and 7 papers above the second district of the Chinese Academy of Sciences have been published as the first author or corresponding author, and 2 results have been transformed.
