  The acid value mainly reflects the rancidity of fat in food. Excessive acid value will cause food to have a hala taste, and the aldehydes, ketones, and acids produced when exceeding the standard will destroy fat-soluble vitamins and cause gastrointestinal discomfort. The reason for the excessive acid value may be that the company’s raw material procurement control is not strict, the production process is not up to the standard, the product storage conditions are improper, etc., especially when the storage temperature is high, it is easy to cause the oxidation of the fat in the food and cause the acid value to exceed the standard.

  Enrofloxacin is a fluoroquinolone drug, a class of synthetic broad-spectrum antibacterial drugs, used to treat animal skin infections, respiratory infections, etc., and is an animal exclusive drug. According to the National Food Safety Standard Maximum Residue Limit of Veterinary Drugs in Food (GB 31650-2019), the maximum residue limit of enrofloxacin in fish (skin + meat) is 100μg/kg. The reason for the excessive enrofloxacin may be the illegal use of related veterinary drugs during the breeding process. Long-term intake of food that exceeds enrofloxacin may cause symptoms such as dizziness, headache, poor sleep, gastrointestinal irritation or discomfort.
   Nitrofurazone is a synthetic broad-spectrum antibacterial drug that can treat livestock diseases. The Ministry of Agriculture and Rural Affairs Announcement No. 250″List of Drugs and Other Compounds Prohibited in Food Animals” stipulates that nitrofurazone is prohibited in food animals. The residues of nitrofurazone and its metabolites in animal-derived foods can be passed to humans through the food chain.
